Caesar Salad Recipe
INGREDIENTS
1-2 Cos/Romain lettuce or 1/4 iceberg if unavailable
¼ French stick or thick white sliced bread x 4slices
¼ tspn crushed garlic
Good glug xtra virgin olive oil
Parmesan shavings
DRESSING
100ml Dijon mustard
130ml BEST EVER mayonnaise
1tspm finely grated Parmesan
1tablespoon Worchester sauce
1 teaspoon lemon juice
¼ tspn crushed garlic
¼ teaspoon anchovy paste (optional)
METHOD
Cut bread into 1/2 inch cubes and toss in a bowl with olive oil, garlic and salt and
freshly ground black pepper. Bake in an oven for approx 15 mins till crisp and golden
brown , remove from the oven and cool.
Mix/Whisk together all the ingredients for the dressing.
Wash and Break up the lettuce leaves into a suitable bowl pour over some dressing
to coat and toss in croutons, top with shaved parmesan.
You may also want to add crispy bacon or smoked chicken or even smoked salmon.
All you need to do is break them up and toss them through the salad. For a more
substantial dish you could always add a soft poached egg.
